Tasting Notes:
Bright and elegant, with crisp red berry notes, hints of pomegranate, and a refreshing, dry finish. Delicate yet expressive, it carries a clean, mineral lift that reflects the purity of the fruit and the gentle touch in the cellar.
Food Suggestions:
Ideal with fresh summer dishes like grilled prawns, salmon sashimi, and vibrant Mediterranean salads. Itscrisp, dry profile also pairs beautifully with charcuterie, soft cheeses, and light pasta dishes featuring tomato, herbs, and olive oil.
Vineyard:
Sourced from the Klein Drakenstein slopes in Paarl, rooted in structured clay-granite soils that enhance depth and balance.
Harvest:
The grapes were harvested in early February during the coolest parts of the day, with a combination of earlymorning picking and selective night harvesting to retain freshness. Grapes was hand-selected to ensure only the best bunches reached the cellar. The vineyard produces a focused yield of around 8 tons per hectare.
In the Cellar:
Crafted with freshness in mind, the grapes were gently whole-bunch pressed to capture delicate colour and vibrant fruit expression. Fermented cool and matured with no oak influence, the wine retained its crisp, pure profile, with time on fine lees adding subtle texture and finesse.
